The Noble Experiment.

1920 to 1933 in the US was known as the Prohibition era, when it became illegal to produce, sell or transport liquor.  Congress thought it would rid the country of so many problems influenced by drinking, instead it just caused new ones.  This was also known as "The Noble Experiment". More than 80 years on and a whole world away you'll find a place bearing this name in Smith Street Collingwood run by husband and wife team Kristin & Daniel Lemura.

The Noble Experiment Melbourne houses the country's largest collection of bottle and barrel aged cocktails, skilfully blended by international bartender Linus Schaxmann and are truly celebrated on the upstairs mezzanine where you can sit back and enjoy your drink in a more intimate space.  Head here after a great meal downstairs prepared by chef Cameron Bell who has worked overseas in Michelin star restaurants and is plating up deliciously creative yet uncomplicated food.  With an extensive and inventive beverage menu, we encourage you to experiment and test your tastebuds, because at this fine establishment drinking is definitely seen as a noble pastime.
